Milk fat for good health
Most of us have become accustomed to viewing fat as something to take out of healthy products, along with sugar and salt. But milk fat now appears set for a renaissance.
Scientific research is finding good things to say about milk fat. At the recent annual sessions of the Global Dairy Platform, I heard:
• the obesity epidemic being linked to cheap reusable cooking oils
• full fat dairy products being associated with longer life
• experts advocating milk fat in enteral nutrition for cardiac patients in intensive care.
The French dairy industry is already promoting butter’s health benefits on television and sales are rising again.
Milk fat’s makeover is making natural dairy an even better place to be.
